Maina's Cookbook: Brain Masala

                                        Brain Masala 


Ingredients:
Brain .... 2 (cow)
Onions(sliced) .... 3 - 4
Ginger & Garlic paste .... 2tsp
Red chillies pwd. .... 1tsp.
Turmeric  pwd. .... 1/2tsp (i)
Turmeric pwd. .... 1/4tsp (ii)
Coriander pwd. .... 1tsp.
Tomatoes .... 1
Salt .... To Taste
Oil .... As Required 
Fresh Coriander(chopped) .... For Garnish
Green Chillies(finely sliced) .... For Garnish
Preparation:
  • Wash  brains & boil in water with 1/4tsp of turmeric pwd. (haldi). After boiling remove  brain from the water and remove any membrane and nerves carefully. Cut each brain into 5  pieces.  
  • Heat  oil in a wide deep pan(karahi)  and fry  sliced onion until they are golden. 
  • Add all the spices: ginger & garlic paste, red chillies pwd., coriander pwd.,turmeric pwd., salt, & tomato. Fry by adding a little water if needed. 
  • Fry untill oil starts to separate.  
  • Now Add boiled brain pieces. 
  • Stir with a spoon very carefully or by holding the pan with  handles(shake the pan gently) until the oil starts to separate. 
  • Garnish with chopped coriander & Green Chillies. 
  • Serve Hot with Naan or Roti.

  1. i ve always seen brain masala cooked the way khageena is in breakfast. this is a different recipe. my dad loves maghaz, I would try this recipe next time (y)
